Beef Satay with Peanut Sauce
Ingredients:
1 pound beef flank steak
about 8 fresh pineapple chunks
about 8 fresh cucumber chunks
about 8 fresh red bell pepper strips
Marinade
2Tbs extra virgin olive oil
1 clove garlic -- minced
1 bunch green onion tops
4 Tbs soy sauce
1 Tbs finely chopped onion
1 tsp lightly packed brown sugar
1/8 tsp curry powder
Instructions:
1) Combine in a medium Bowl olive oil, garlic, soy sauce,
onion, brown sugar, and curry powder and wisk until well blended. Set aside 1/4 of the marinade.
2) Cut steak
slices diagonally against the grain into 1/8 inch thick slices.
3) Place beef
slices in the marinade and place in refrigerator 3 to 4 hours, turning
occasionally.
4) Soak 12-10" bamboo skewers in water
at least 10 minutes.
5) Preheat grill to a medium high heat.
6) Remove beef from
marinade and place meat, pineapple, cucumber chunks, green onion tops, and red
bell peppers on skewers as desired.
7) Place the skewers on the grill. It does not
take long for the skewers to cook (approximately 5 minutes per side).
8) Turn
occasionally and brush with the marinade sauce that you saved earlier.
9) Remove
from fire when meat is done to your taste (remember under cooked meat can carry
food born illnesses).
10) Push the meat, etc. from your skewer to your plate. Serve
with peanut curry sauce, or spoon sauce over it.
This is a twofer for the recipes now the peanut sauce.
Peanut Sauce (More Original)
Ingredients:
1 cup fresh-tasting dry roasted peanuts, unsalted
1/3 cup water
2 cloves garlic, minced
1/2 tsp. dark soy sauce
2 tsp. sesame oil
2 Tbsp. brown sugar
2 Tbsp. Regular Soy sauce
1/2 tsp. tamarind paste OR 1/2 Tbsp. lime juice
1/2 tsp. cayenne pepper, OR 1 tsp. Thai chili sauce (more or
less to taste)
1/3 cup coconut milk
Directions:
1) Place all
ingredients in a blender or food processor. Blend or process until sauce is
smooth. If you prefer a runnier peanut sauce, add a little more water or
coconut milk.
2) Once mixed do a
taste test. Add more Soy sauce if not salty enough. Add more cayenne if not
spicy enough. If it is too salty, add a squeeze of fresh lime juice. Add more
sugar If you'd prefer it sweeter.
