Pickled Ginger

I love Sushi, but what I like most about it is I can make it like it is a new taste experience each time I take a bite. The reason this can happen is a little thing called Pickled Ginger. It cleanses the pallet so when you take a new bite of sushi all the flavors of the sushi come out in a blinding explosion. So here is a simple way to make your own.
 Pickled Ginger

Ingredients:

·         2 lb fresh young ginger (shin shoga) But regular will do if you cant find the young stuff.
·         3 cups rice vinegar
·         2 cups sugar
·         2 tsps salt



Directions:
1) Wash ginger root and peal off skin. 
2) Slice the ginger thinly and salt them. Leave salted ginger slices in a bowl for one hour. 
3) Dry the ginger slices with paper towels and put them in a sterilized container or jar. 
4)Mix rice vinegar and sugar in a pan and bring to a boil.
5) Pour the hot mixture of vinegar and sugar over the ginger slices, and let cool.
6) When the Ginget is pickeled it will turn pink.
Note: If the ginger is old it might not turn pink naturally.
7) Cover the container or jar and store it in the refrigerator. Enjoy at your leisure!

This is simple and tasty. Plus Ginger is great for the digestion system, and has a whole bunch of helpful properties.
