A Taste of Japan, Yaki Tori

I love Japanese food, between that and Italian it's a war. Both are carb heavy, but over all Japanese food is healthier. My Wife who has actually been to Japan says that one of things she remembers most is walking down the ginza (a shopping area) and the smell of the Yaki Tori cooking permeated all through the place. That's right the dish for today is Yaki Tori

This Dish is better if it is cooked on a charcoal grill; however gas grills do just fine.


Yaki Tori

Ingredients:
·         2 chicken breasts
·         1 medium negi (green Onion or Leek)
·         1 tbsp sugar
·         2 tbsp sake
·         3 tbsp mirin
·         3 tbsp soy sauce
·         3 tps Ginger juice
·         *Bamboo skewers (soaked in water for 30min to prevent burning)
Preparation:
1) Soak Skewers in water.
2) Cut chicken breasts into bite-sized pieces. 
3) Cut negi into 1 inch lengths. 
4) Skewer the chicken and negi in alternating order. 

Sauce:
1) To make teriyaki sauce, mix sugar, sake, mirin, ginger juice,and soy sauce in a small bowl. 
2) Grill the skewered chicken over hot coals, basting with teriyaki sauce until the chicken is cooked.

I hope and pray that someday I will be able to go to Japan myself instead of getting authentic recipes for the people who live there.
