Episode 2 - Twice Baked Potatoes (4 kinds)

In this video episode, we tackle the number one search term on this website, Potatoes. We ain't exactly the sharpest knives in the drawer, but we figure there is a really good reason for potatoes being number one. They are affordable, filling, and there are about a bazillion ways to make them taste good.

Here are 4.

We found this recipe on the Many Faces of Potatoes. If you follow that link, you will see that the picture looks inviting, and there are several comments extolling their awesomeness, but there was little in the way of measurements. Additionally, when we were considering this, our head chef Mr. Kirsch is deathly allergic to tuna. (I prefer to call him Captain Cookie, but that is just me).

So we set out to modify this recipe to A) not kill him, and B) make something that tasted good and was original. We ended up with 4 great ones that you really must try yourself. They all pretty much rock the house. Half a potato is a complete meal for one person. Throw on a small salad and the meal is complete. You will walk away full.

In the video below, you will find the following versions.

  1. Flavored tuna and spinach with Pepper jack and cheddar
  2. Chicken and spinach with pepper jack and cheddar
  3. Ham, spinach, and swiss
  4. Veggie (stir fry blend), pepper jack, swiss and cheddar
