Heart Healthy Grilled Veggies!!

      OK, now everybody has a mother and mine saw my first Podcast and then told me what she thought. Besides not liking my haircut she told me to put on some "healthy" recipes. Oh and to loose some weight, you've got to love mothers.

  And since the 4th of July is coming up and grilling is in the air, I thought I would share a healthy side dish to go with all that chard meat. Behold....




Grilled Veggies 
Olive Oil & Balsamic Vinegar Style


Ingredients:

§  Red Bell Peppers
§  Green Bell Pepper
§  Yellow Bell Pepper
§  Red Onion
§  4 Jalapenos Peppers
§  1 Zucchini Squash
§  1 Yellow Squash
§  8 Mushrooms
§  1/4 cup Virgin Olive Oil
§  3 tbsp Balsamic Vinegar
§  1 tsp Oregano
§  1/2 tsp Garlic Powder
§  Salt and Pepper to taste





Directions:

1.       In a mixing bowl, combine olive oil, balsamic vinegar, oregano, garlic powder, and salt and pepper.
2.       Cut bell peppers into large pieces.
3.       Chop onion into large pieces about half an inch thick.
4.       Take tops of Jalapenos off and cut in half and then half again.
5.       Cut Yellow and Zucchini Squash into half inch thick medallions.
6.       Place a skewer through peppers, mushrooms  squash and onions to keep them in place before           placing on grill.
7.       Coat vegetables with mixture with a brush and place on the grill.
8.       Grill for 10-to-15 minutes, continually brushing with dressing and flipping at halftime.




    A little less healthy version includes dissolving a tablespoon of sugar into the mixture and that way a 
slight glaze forms on the veggies.  Then add butter...but don't tell my mom I said that. It's supposed to be 
healthy.
