Zesty Tilapia


Well I tried like always to have the recipe ready to go so it would auto post for Friday. Don't know what happened but not only did it not post, it disappeared! Well I decided to do a different recipe then what I had originally planed. I figured it was divine intervention that the sight got rid of my original post. So here we go...




Zesty Tilapia

Ingredients:


6 (6-ounce) tilapia fillets
6 tablespoons olive oil, plus additional for brushing
1 tablespoon grated orange zest
6 tablespoons freshly squeezed orange juice
1 tablespoon grated fresh ginger
1 teaspoon hot sauce, to taste
1 teaspoon salt Freshly ground black pepper

Directions:


1) Whisk together the 6 tablespoons oil, the orange zest, orange juice, ginger, hot sauce, salt, and pepper, to taste.

2) Put Fish in a large Bowl or deep dish, and pour the mixture over the fish. Cover and marinate in the refrigerator for 30 to 60 minutes.

3) While you are waiting prepare grill, by lightly oiling the grilling area so the fish don't stick. Then turn on the grill to a medium hot heat.

4) Brush the fish with a little additional oil, and place the fish on the grill.

5) Grill until fish just flakes when tested with a fork, about 5 minutes per side for every inch of thickness.




The Orange and Ginger give this dish a great citrus flavor and the pepper and hot sauce give it that kick. Try using fresh Jalapeno, Serrano, or what ever your favorite pepers minced instead of the hot sauce. Hope you enjoy this dish as much as my friends did. This dish goes well with a light risotto side dish.
