Taco Casserole

This recipe is a favorite of a good friend that I met in the Navy how now lives in Oregon. When ever he comes to visit this and my wife's pineapple upside-down cake are the two things he always ask for.This is a monthly standard meal for our home. It is crazy easy to make as well.
Taco Casserole

Ingredients:

1-pound ground beef
1- Medium onion (diced)
1- Medium jar green olives (diced)
1- Large can black olives (diced)
2- Envelopes taco seasoning (Brand not specific)
1- Regular can tomato sauce
1-6 ounce can tomato paste
1- 16 ounce sour cream
1- Bag tortilla chips
1-bag Mexican blend shredded cheese (at least 32 ounces)

Directions:

1) Preheat oven to 375 °

2) Brown ground beef, mix in one envelope of taco seasoning while meat is still raw, and add onions and olives and cook until meat is thoroughly browned.  Drain fat then add tomato products and cook on low heat for about 10 minutes.
 
3)Layer:
In casserole pan layer until all mixture is used:
a) Tortilla chips
b) Meat Mixture
c) Cheese

4)Bake in oven until cheese is browned.

5) Add sour cream and enjoy.

If you don't like green olives leave it out. I've even tried it with a can of well drained Rotel tomatoes. This is a good recipe to experiment with. Have fun with it.
